This is our second time featuring coffee from the KOKE washing station in Yirgacheffe. This time around we are so pleased to have secured a very rare honey processed lot, our supplier was only able to bring in five sacs, of which we purchased three. As a quick refresher, Honey processing lives in between natural (dry) and washed, after the coffee is picked it is dried for two days in its fruit. the cherry fruit is then removed, but some mucilage is left on the bean. The beans dry on raised beds for 18-21 days, the added time drying in the mucilage is what gives honey processed coffees a very fruit forward, sweet cup. This honey processed coffee is STUPENDOUS! Notes of jasmine, blueberry and peach are followed but a very subtle chocolate aftertaste - super clean, silky and smooth. This is a very limited offering, our supplier was only able to source five sacs, of which we purchased three - when this one is gone it is gone!
